Are fresh truffles available all year?
No.
Like all agricultural produce, truffles are seasonal.
The Truffle Farm (Tasmania) grows two varieties of black truffle, allowing fresh truffles to be harvested for much of the year. However, there is a short period when fresh truffles are generally unavailable.
Seasonal conditions, weather and natural growing cycles determine when truffles are ready for harvest. For this reason, exact harvest dates vary slightly from year to year.
Which truffle species are grown?
The Truffle Farm (Tasmania) produces two black truffle species.
Winter Black Truffle
Scientific name: Tuber melanosporum
Common name: Périgord Black Truffle
Typical fresh harvest: Early June to mid-September.
Summer Black Truffle
Scientific name: Tuber aestivum
Common name: Burgundy Truffle
Typical fresh harvest: Early December to late May.
What happens during October and November?
October and November are typically the transition period between the Summer and Winter harvests.
Fresh truffles are generally unavailable during this time.
Guided tours continue to operate throughout this period.
Visitors still experience a working truffle farm, learn about commercial truffle production and meet the farm's trained truffle dogs.
Selected food experiences feature premium frozen Tasmanian truffles where appropriate.
Why are frozen truffles used?
Premium Tasmanian truffles are carefully frozen at the peak of freshness during the harvest season.
Freezing allows visitors during the out-of-season period to continue enjoying authentic Tasmanian truffle flavour while respecting the natural growing cycle.
Frozen truffles are used only in menu items specifically designed to suit the product.
Fresh truffles are not substituted where the quality or experience would be compromised.
Why isn't truffle pizza available all year?
The Truffle Farm (Tasmania) believes fresh truffles provide the best flavour and aroma for dishes such as truffle pizza.
For this reason, truffle pizza is offered only when fresh seasonal truffles are available.
During the out-of-season period, premium frozen Tasmanian truffles are featured in menu items specifically selected to complement the product.
This approach reflects the farm's commitment to showcasing truffles in the most appropriate way throughout the year.
Can I buy fresh truffles?
Fresh truffles are available during the harvest seasons, subject to seasonal availability.
They can be purchased from the Farmgate shop or online.
